In latest pastry news, there’s now a slew of social run clubs (Croissant Run Club, Unofficial Run Club and Pastry Run Yourself Club), which conclude their weekly sweat-sesh with a well-deserved little treat at a premium bakery of choice.
But, whether you’re flaky with exercise or not (because, mood), we’ve compiled a list of the best bakeries in Sydney for every kind of viennoiserie lover. From crunchy sourdough breads and flaky almond croissants to French patisseries and Turkish bakeries, even a plant-based morsel for good measure — there’s a luxurious nearby haven, or one worth travelling for — to satisfy your morning carb needs. Innovative pastries in Surry Hills, Newtown & the CBD.
There’s a tasty reason why AP Bakery is one of Sydney’s most popular. The bakery child of some the city’s best eats founders: Russell Beard (Reuben Hills, Paramount Coffee Project); Ping Jin Ng (Paramount House Hotel); Mat Lindsay (Ester, Poly); and Dougal Muffet (Moonacres Kitchen); A.P — which stands for “all-purpose” — has been serving swathes of Sydneysiders, and visitors alike, for just over two years now. With a no plain flour approach, A.P grows their own grains and mills them onsite in Marrickville to later sell to the masses at Paramount House Hotel.
The urban oasis on the boutique hotel’s rooftop sells daily favourites including hazelnut and chocolate praline twice baked croissants; fig, olive oil and ricotta Danishes; Aleppo pepper scrolls; fermented potato ciabattas; and their signature egg bun. There’s also a breakfast menu for those after a sit-down experience, amongst the 40-odd pot plants, with slick coffee, naturally, by Reuben Hills. Those working in the city can reap the pastry benefits with an AP at Martin Place, with inner west girlies also treated to an AP in Newtown.

If you’re living the dream on the northern beaches, or doing a little Manly day trip, Rollers Bakehouse is a must-visit. Evoking Palm Spring vibes tucked away in a pastel pink canteen, Rollers sells everything from bakery classics to the more indulgent and experimental, helmed by self-taught baker Baker James Sideris. Centred around a little courtyard with multiple Instagrammable cacti, the Rialto Lane haunt prides itself on classic twice-baked croissants; spanakopita twice-baked croissants; hummus and eggplant croissants — featuring a green chilli on top; and Basque cheesecakes if you’re feeling a little fancy.

A Sydney institution spread across two nearby Woolloomooloo stores, Flour and Stone has built a cult following over the years — with even Nigella Lawson among their pastry fans. For the record, the celeb foodie ordered their panacotta lamingtons and canelés; calling Flour and Stone’s offering “exquisite.” Serving timeless comforts such as fresh sourdough, scones with jam and cream, sausage rolls and more; the venue, owned by Nadine Ingram, also offers some of the best classic cakes for special occasions: pistachio, raspberry and rose birthday cake, anyone? Aspiring bakers, or those who enjoy home cooking, can also learn from the best with regular baking classes available.

If you have a penchant for Gözleme, börek, baklava and more scrumptious Turkish delights — there’s also that chewy goodness on offer — then the “queen” of bakeries (“Malika” translates to “queen” in Arabic) is sure to solve all your pastry problems. The new Turkish bakery in Surry Hills offers a variety of house-made savoury and sweet pastries, along with brunch options — chilli scrambled eggs, yes please! — similarly to their original venue in Botany. Housed in a light and airy terrace, Malika Bakehouse, offers outdoor seating for those delightful sunny mornings — with a cosy indoor setting inside. Expect Deluca Turkish coffee and a curated selection of teas.

A Melbourne icon gone Sydneyside. Baker Bleu remains one of BAZAAR’s Digital Content Manager, Hayley Peppin’s, favourites — and for good reason. First launched in 2016 by Mike Russell in Melbourne’s Caulfield North, the Melburnian struck a deal with acclaimed Australian chef Neil Perry to open an outpost in Double Bay in 2022, just doors down from Perry’s French restaurant, Margaret. It’s also Russell’s first bakery to offer a dine-in service.
With lines trailing down the leafy Guilfoyle Avenue almost every weekend morning, expect some of Baker Bleu’s signatures to sell out quickly. If you’re lucky, you’ll be able to get your hands on their covetable almond croissants, or their regular special — almond and chocolate croissants — both of which use a moist sourdough base — sourdough breads; their loaded sandwiches and baguettes; and this writer’s personal Baker Bleu favourite — a classic, yet timeless, pain au chocolat. Flaky on the outside, pillowy on the inside — with just a hint of dark chocolate for some much-needed joie de vivre.
Humble.
Nostalgic baked goods in Surry Hills & CBD.
No reason to stay humble , the cosy Surry Hills venue serves up some of the best modern spins on classic baked goods. The fourth venue by restauranteurs Elvis Abrahanowicz, Ben Milgate and Joseph Valore of Bodega x Wyno and Porteño and Bastardo; Humble is nostalgia in a bite. There’s tummy-grumbling iced finger buns, sure to give Baker’s Delight a run for their money; pig’s head sausage rolls; lamingtons and seasonal hot cross buns — but also some more substantial dishes such as Wagyu beef Meatballs with bone marrow butter on freshly baked ciabatta. While waiting for coffee, or queue — it’s only expected here — feast your eyes on a free “show,” with Humble’s captivating open kitchen layout. Those working in the city can also pick-up a lunch-time sandwich and/or sweet treat with a second outpost on Quay Quarter Lanes.
Grumpy Baker.

We’re quite positive you won’t leave with a bad mood, despite the “Baker” having one. The Middle Eastern-inspired bakery, which has more than 11 outposts spread throughout Sydney, serves up everything from traditional shakshuka to Moroccan-spiced lamb pies and the heartiest of sandwiches — expect combinations such as chicken schnitzel with roasted eggplant, Romanian spicy salad, and lettuce in a house baked challah roll as well as as crispy cheeseburger untraditionally served in a house made pita with Isareli salad, chimichurri and tahini. Of course, the Grumpy Baker has a swathe of classics including sausage rolls, choc chip muffins, almond croissants and more — and the best baked bread and sourdoughs to take home each day.
